Ingredients:

  • 1 tablespoon High Potency Curcumin Turmeric Powder
  • 200mL water (for turmeric)
  • 1 cup basmati rice
  • 1 tablespoon coconut oil or ghee
  • 1/2 teaspoon ginger, minced
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon cumin (optional)
  • 2 cups water (for rice)
  • ½ teaspoon of freshly cracked pepper
  • Salt to taste
  • Fresh coriander, chopped, for garnish

Instructions:

Prepare the Golden Paste:

  • Bring the turmeric and water to a boil in a saucepan, then lower the heat and simmer until you have a thick paste. This should take about 7-10 minutes and you may need to add the extra water along the way to achieve your desired consistency.
  • Set aside to cool.

Rinse and Soak the Rice:

  • Rinse the basmati rice under cold water until the water runs clear.
  • Soak the rice in water for about 15-20 minutes, then drain.

Cook the Rice:

  • In a saucepan, heat coconut oil or ghee over medium heat.
  • Add the Golden Paste, ginger and garlic, and sauté for a minute until fragrant.
  • Add the soaked and drained rice to the saucepan and stir to coat the rice with the golden paste.

Add Water and Spices:

  • Pour in 2 cups of water and add optional cinnamon and cumin, if desired.
  • Season with salt according to your taste.
  • Bring the mixture to a boil, then reduce the heat to low, cover with a lid, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed.

Fluff and Garnish:

  • Once the rice is cooked, fluff it with a fork to separate the grains, adding in cracked pepper as you go.
  • Garnish with fresh chopped coriander.
  • Add other cooked veggies to the rice mix if preferred. 

Serve:

  • Serve the Golden Turmeric Rice as a side dish to your favourite main course.
